Carrot Rice

Procedure:
Ingredients: (Serves - 2)
Cooked Basmati Rice - 2 Cups ( Rice must be well cooked and must not stick)
Grated Carrot - 3 cups
Green Chillies - 8 to 10 (This is for high spice - Adjust accordingly)
Whole Garam Masala ( an inch of Cinnamon Stick, 4 cloves, 3 cardamom and a bay leaf)
Oil & Salt
Recipe:
* In a pan, heat oil and add Whole Garam Masala and fry for a minute.
* Next add in the Grated Carrot, stir well and cover and cook stirring intermittently so that carrot doesn\'t stick to the Pan.
* Once the content of carrot is reduced, add cooked rice and stir well. Add salt to taste.
This can be served along with any kind of Raita or with Plain Yogurt too. Although I love this dish, I very rarely make it because of the tedious process of grating Carrots.
